Default Regal Dies while driving

Hi all, I've been having a problem with my 2000 Buick Regal LS (104K miles)for several weeks. It never happens in the morning (cold) only late in the day after I've driven for a while, park, then re-start my car. Essentially I'll be driving down a road between 10 and 40 mph and the car suddenly dies. My typical response is to shift into neutral and re-start it while still coasting on not becoming a road hazard! More often than not, the car dies once again, and continues to do so until I get it started and immediately rev the engine up to 3000+ rpm (usually in neutral, sometimes while in drive). Once I do this, the car stays running and drives just fine.

This really makes me think it is an obstruction of some sort. I changed the fuel filter, but still experienced this problem a couple of days later. Could this be an exhaust blockage causing the engine to choke out (catalytic converter)? I just replaced the plugs and wires (after the problem was first experienced).

Let me know if you have any great ideas. Good ideas are acceptable too! Thanks!
