coolant temperature sensor

Need help with this one
I have a 2001 Lasabre and i have notice that the coolant temp hand goes up and down. I have done all that i have been told to do
1 change sensor three times
2 Thermostat
3 remove the battery terminal to reset
4 check for other sensor that may be bad
and nothing seems to help, any one run into this problem?
